Are you playing the Steam version or CD version?
What OS are you running?
I'm running SH3 on Steam in 9.2 on OS X Snow Leopard and haven't had any problems with it. Have you tried running a log? When I have trouble with games, I run a log.
On the Crossover Games menu, go to 'programs' and choose 'run command'. Select the bottle for SH3/4. Then browse to the exe. Check the box that says 'create log file' and click 'run'. It'll prompt you for a place to save your log file. I created a folder in Documents called Crossover Logs and I put all my logs in there. I name them, for example, SH3log so I know which is which, and sometimes have, for example, SH3log2, SH3log3 and so on as I track one by one the things that aren't working.
Run a log and then look at the file with textedit. Often you'll see something that doesn't work. On my system, I'm often missing a dll file, or my old Mac didn't like FBO. Try to look at the log and see what's missing.
